Roast Reserve FAQ

What does roast reserve mean?

Reserving your roast holds the items for pickup and purchase. There may be factors out of our control that limit our ability to fulfill a preorder. We'll do our best to communicate any changes or issues as early as possible.

What if I need to change or cancel my order?

We're happy to work with you on changes to your preorder. Call our associates at (585) 272-9470 . To make the process easier, have your order ID or name on the order ready. Your order ID is listed on your confirmation email.

How do I pick up my order?

Bring a copy of your order or your order confirmation email and come right into Palmer's Direct to You Market during your preferred pickup time and look for any of our Holiday Helpers (Palmer's staff) right on the market floor.

When is preordering available?

Preorders are accepted online until December 22. In-store orders are accepted through close of business on December 24.

Butchering FAQ

What can I expect regarding my beef preorder butchering or trim?

Unless otherwise noted, all items will be netted to retain shape during roasting (bone-in items are cut off the bone and tied back on; an uncut option is available in-store for the Whole Bone-in Ribeye). 

Tenderloins include trimmings packaged separately in the same box; expect trimmed tenderloins to be roughly 60% of the original product size. 

All netting is easy to remove at home; trim can be discarded if you prefer.

How are sizes and portions calculated?

Estimates are based on uncooked weights. For tenderloins, estimates are based on 6-8 ounces of trimmed meat per person. Boneless ribeye estimates are based on 12 ounces per person. For a bone-in ribeye, estimate 1 pound per person. Unless otherwise indicated, all weights are an average. We do our best to be as close as possible to the average weight listed, but exact sizing is not guaranteed.

I need a bone-in roast. Can I get half as a roast and half cut into steaks? 

We're always happy to cut to order! Simply visit the Direct to You Market and our in-house butchers will be glad to process your order in person. Specialty or custom cuts cannot be preordered.
